At SubRosa, Shiraz is more than just a signature varietal; it’s a true expression of the Grampians and Pyrenees regions, where the cool climate and rugged landscapes contribute to the unique character of our wine. Our SubRosa Shiraz is crafted to showcase the best of these regions, delivering a wine that is bold, complex, and deeply reflective of its terroir.
The grapes for our Shiraz are sourced from select vineyards in both the Grampians and Pyrenees, where the combination of granite-rich soils and a cool climate creates ideal conditions for growing this iconic varietal. The 2024 vintage benefitted from a growing season marked by moderate temperatures and well-timed rainfall, allowing the Shiraz grapes to ripen slowly and develop intense flavours and fine tannins.
In the winery, we approach the Shiraz with the same meticulous care that defines all of our wines. The grapes are hand-picked at optimal ripeness and undergo a slow, controlled fermentation to extract the maximum colour, flavour, and structure. The wine is then aged in a combination of new and seasoned French oak barrels, which imparts a subtle complexity without overpowering the fruit’s natural characteristics.
On the palate, SubRosa Shiraz is a celebration of the Grampians and Pyrenees. It opens with rich aromas of dark berries, black pepper, and hints of spice, followed by a full-bodied and well-structured palate that features layers of blackberry, plum, and savoury notes. The fine-grained tannins and balanced acidity provide a long, elegant finish that makes this wine perfect for cellaring, though it’s equally enjoyable now.
