The grapes for our Rosé are carefully selected from premium vineyards in the Grampians, where the cool climate and distinctive terroir impart vibrant acidity and delicate flavours. The 2024 vintage was exceptional, with a growing season that balanced warm days and cool nights, allowing the grapes to ripen slowly and evenly. This vintage combines Grenache and Shiraz, two varietals that thrive in our region and bring unique characteristics to the wine.
In the winery, we treat our Rosé with the same meticulous care as our more robust wines. The Grenache and Shiraz grapes are harvested at their peak to preserve their natural acidity and vibrant fruit flavours. The grapes are then gently pressed, allowing for just the right amount of colour and flavour extraction. A cool fermentation process follows, which helps retain the bright, fresh character of the wine, resulting in a Rosé that is crisp, clean, and wonderfully expressive.
On the palate, SubRosa Rosé offers a harmonious blend of red berries, citrus, and subtle floral notes, enhanced by the Grenache’s delicate fruitiness and the Shiraz’s subtle spice. This makes it a versatile wine, perfect for pairing with a variety of dishes, from light salads and grilled seafood to charcuterie boards. Whether enjoyed with food or on its own, this Rosé is a true reflection of the Grampians’ unique terroir.
